Stir Fried Mushroom
(Oseng-Oseng Jamur)

Ingredients:
  • ¼ cup sliced onion
  • 1 clove garlic, slices
  • 1 fresh green semihot chili, sliced thin diagonally
  • 1 Tbs. vegetable oil
  • ½ lb. fresh mushrooms, sliced
  • ½ tsp. sugar
  • ½ tsp. salt
  • ¼ tsp. shrimp paste
  • 1 tsp. tamarind, dissolved in 1 Tbs. water
  • 1 bay leaf (salam)
  • 1 piece galangal (laos)
Instructions:
  • Heat the oil over medium heat then stir fry the onion, garlic and chili for about 1 minute or until fragrant. 
  • Add the rest of the ingredients, mix well and stir fry for three minutes more.
  • Serve hot or at room temperature.

Makes 4 servings with other dishes.
