Green Beans Stew
(Gulai Buncis)

Ingredients:
  • 350 gram green beans, sliced-thin diagonally
  • 250 gram potatoes, cut into 1 cm cubes, then deep fry until half done
  • 100 gram shredded coconut, stir-fry without oil
  • 250 gram beef, cut into 1 cm cubes (optional)
  • 350 cc thick coconut milk from  1/3 coconut
  • 1 bay leaf (salam)
  • 1 stalk lemongrass
  • 1 piece galangal (laos)
  • 3 Tbs. vegetable oil, for stir fry

Spice Paste Ingredients:

  • 3 candlenuts, oil free stir fry
  • ½ tsp. fresh grated turmeric
  • 1 tsp. fresh grated ginger
  • 1 tsp. fresh peppercorns
  • 5 small shallots
  • 2 cloves garlic
  • salt to taste
Instructions:
  • Heat oil over medium heat then stir fry the green beans until soft, then remove and set aside.
  • Heat a new set of oil over medium heat then stir fry the spice paste then add bay leaf, lemongrass and galangal until fragrant.  Next put in the beef (optional), coconut milk and grated coconut and bring them to a boil.
  • Add the green beans and potatoes.  Boil until everything is well done.  Remove and serve while warm.

Makes 3-4 servings with other dishes.
