Ingredients:
- ¼ cup sliced
onion
- 1 clove
garlic, slices
- 1 fresh green
semihot chili, sliced thin diagonally
- 1 Tbs.
vegetable oil
- ½ lb. fresh
mushrooms, sliced
- ½ tsp. sugar
- ½ tsp. salt
- ¼ tsp. shrimp
paste
- 1 tsp.
tamarind, dissolved in 1 Tbs. water
- 1 bay leaf (salam)
- 1 piece
galangal (laos)

Instructions:
- Heat the oil
over medium heat then stir fry the onion, garlic and chili for about
1 minute or until fragrant.
- Add the rest
of the ingredients, mix well and stir fry for three minutes more.
- Serve hot or
at room temperature.
Makes 4 servings
