Melon and Shredded Ham Soup

Ingredients:
  • 1 piece Chinese winter melon or cucumber (approx. 600 gram)
  • 100 gram ham
  • 5 cups chicken stock
  • 1 Tbs. finely sliced ginger
  • 2 Tbs. finely sliced spring onion
  • 1½ Tbs. light soy sauce
Instructions:
  • Peel the melon. Cut into thin slices and then into 4 cm cubes. Slice ham into long thin strips.
  • Place stock in medium pan to a boil. Reduce heat to simmering and add the melon, ginger, spring onions and soy sauce. Simmer for 2 minutes until melon is tender. Add ham to the soup, simmer for another minute until warmed through.
  • Serve immediately.
