Ingredients:
- 1½ cups flour
- 1 cup water
- A pinch of salt
- 3 large eggs
- 4 Tbs. granulated sugar
- oil for deep frying

Instructions:
- Sift flour twice.
- In a pan bring the water to a oil
and add the salt.
- Slowly add the boiling water to the
flour and mix it until smooth. Add eggs one at a time; beat lightly into a smooth
heavy batter.
- Heat the oil in a pan to medium hot.
Squeeze one portion of the batter into a ball and scoop out the ball with a greased
spoon then deep fry it. Scoop out the rest in the same manner.
- Deep fry them over medium heat until
the balls have tripled in size; turn the heat to medium high and cook until they are
golden brown. The frying time should be approximately 7 minutes.
- Remove and drain; coat the puffs
with granulated sugar.
Make 16 puffs. |
