Sugar-coated Puffs

Ingredients:
  • 1½ cups flour
  • 1 cup water
  • A pinch of salt
  • 3 large eggs
  • 4 Tbs. granulated sugar
  • oil for deep frying
Instructions:
  • Sift flour twice.
  • In a pan bring the water to a oil and add the salt.
  • Slowly add the boiling water to the flour and mix it until smooth.  Add eggs one at a time; beat lightly into a smooth heavy batter.
  • Heat the oil in a pan to medium hot.   Squeeze one portion of the batter into a ball and scoop out the ball with a greased spoon then deep fry it.  Scoop out the rest in the same manner.
  • Deep fry them over medium heat until the balls have tripled in size; turn the heat to medium high and cook until they are golden brown.  The frying time should be approximately 7 minutes.
  • Remove and drain; coat the puffs with granulated sugar.

Make 16 puffs.
