Ingredients:
- 1 lb. sweet potatoes or yams
- 4 cups water
- Oil for deep frying
- Cooking Liquid:
- 1 cup water
- 3-4 Tbs. sugar
- Salt to taste

Instructions:
- slice potatoes ¾" thick.
Peel off the thick skin, cutting out the inner line on each slide that is about
¼" inside the skin.
- Drop the potatoes into the water and
soak for half an hour.
- Drain and wipe the potato slices
dry.
- Heat oil to 335°F and fry the
potato slices quickly - about 30 seconds to 1 minute - until they are golden brown.
Remove and drain on paper towels.
- Place the slices in a pot, add
water, half the sugar and salt, and bring to a boil. Lower the heat and cover with a
paper drop-lid (cut parchment paper to fit the top of the pot and put a hole in the center
for steam to escape), vented.
- Simmer slowly until the liquid is
almost gone. Half way through the cooking, taste and add more seasoning.
Unless you use the lowest heat, the potatoes may crumble.
