Papaya Salad
(Som Tam Malako)

Ingredients:
  • 1 peeled and shredded green papaya (about 4 cups)
  • 6 garlic cloves
  • 1 dried chili soaked in water
  • 7 peppercorns
  • 1 Tbs. tamarind juice
  • 3 Tbs. fish sauce
  • 3 Tbs. palm sugar
  • 2 Tbs. lime juice
  • ¼ cup ground dried shrimp
  • ¼ cup lime cut into small cubes
  • cabbage, lettuce and various sliced vegetables
Instructions:
  • Gently crush the shredded papaya in a mortar with a pestle. Remove and set aside.
  • Crush the garlic, dried chili, and peppercorns in mortar, mixing thoroughly.
  • Mix the tamarind juice, fish sauce, and sugar in a pot and heat to a boil. Remove from heat, allow to cool, add lime juice, and mix the chili mixture.
  • Add the crushed papaya, the dried shrimp and the lime cubes and mix thoroughlly.
  • Serve with lettuce and other sliced vegetables of choice.

Make 4 servings.
