Ingredients:
- 1 peeled and shredded green
papaya (about 4 cups)
- 6 garlic cloves
- 1 dried chili soaked in water
- 7 peppercorns
- 1 Tbs. tamarind juice
- 3 Tbs. fish sauce
- 3 Tbs. palm sugar
- 2 Tbs. lime juice
- ¼ cup ground dried shrimp
- ¼ cup lime cut into small
cubes
- cabbage, lettuce and various
sliced vegetables

Instructions:
- Gently crush the shredded papaya in a mortar with a pestle. Remove
and set aside.
- Crush the garlic, dried chili, and peppercorns in mortar, mixing
thoroughly.
- Mix the tamarind juice, fish sauce, and sugar in a pot and heat to
a boil. Remove from heat, allow to cool, add lime juice, and mix the chili mixture.
- Add the crushed papaya, the dried shrimp and the lime cubes and
mix thoroughlly.
- Serve with lettuce and other sliced vegetables of choice.
